Add /health endpoint #10

I do have an issue where my plex server starts slower than plex_exporter and the latter does not reconnect. This leads to a lack of metrics and an alert. It would be nice to have one of 2 things (or both):

With the latter, I could have a liveness probe and automatically restart the container when metrics are not collected.
