Remove pyenchant from Sphinx build #58

As per discussion from #57, do a change that removes the need for pyenchant from the Sphinx conf.py so as to sidestep issue with lack of windows compatibility.

Another possibility is to move this into it's own mini project that is built offline (via Travis CI) and thus not dependant on developer building
