Each (group buying) food collective has its own Foodsoft instance and ultimately manages its own data. To avoid each collective the tedious work of entering and updating article details (for farmers the offering can change weekly), a Foodsoft hoster can run a central database with article and supplier information, that each collective can synchronise with. I've just written a wiki page on this.
I'm not sure how open this data is. I would think that availability is generally ok to share (but we'd need approval from the suppliers), price information can be competition-sensitive. But I'm pretty confident that some smaller suppliers would be happy to share prices too, especially if that gets them more attention.
Over time I've come to the conclusion that openness and transparency can be freely given. As a technology provider, I'd like to make it as easy as possible to be transparent, and to receive the benefits that come with it. But in the end it's up to the information owner to decide on boundaries. (Though it may be debatable what ownership I have over a price once I've payed it - but that's probably another topic.)
