Modify ES mapping file #185

Change `name` from keyword to text; adjust other keywords to text

Can't return partial searches for names, e.g. https://api.outbreak.info/resources/query?q=name:Macaque&fields=name vs https://api.outbreak.info/resources/query?q=name:*Macaque*&fields=name

Adjust dateModified, etc. to date type

Need to change ES mapping at: https://github.com/outbreak-info/outbreak.info-resources/blob/master/outbreak_resources_es_mapping.json
