Regarding Hyper-V support, I wanted to check whether you are aware of https://github.com/pbolduc/packer-hyperv (a fork of the MS Open Tech project)?

It seems they have some level of Hyper-V support, but no support for WinRM.

I was wondering (may give it a spin myself), are both projects complementary or is some kind of integration required?

I haven't looked myself but if they are released as plugins in theory they should be complimentary and work. Of course you won't be able to use our custom provisioners on those builders however as they do need WinRM

I hope one day I can use packer with winrm for Hyper-V :+1:
