fixes #117 closes #116

Reverts unnecessarily complicated versioning scheme introduced in May
Publishes multi-manifest images to latest flag, thus removing the need to append -multi to image tags.

Tested against my fork, albeit with the wrong image name (🤦🏾 😂 )
