Update figures in documentation #43

The images throughout the documentation need updating, but this needs to be done once other issues are dealt with - this issue is a reminder that that is required. See also issue #16 when doing this regarding resolutions

With the above commits this is now done! I note that the software#s minimum GUI size is a little larger than the render in html, so I didn't quite get the images down to the point where they aren't shrunk - but I think this version is a lot clearer!
