Keep parameters for supported versions in a table #164

This gives a central point of truth and makes it easy to see which software version each image contains.

Also fixes a number of issues and introduces a new image naming scheme.

Builds fail sometimes as TeXLive mirrors tend to be out of sync, causing the installer archive and the archive signatures to not match. Still merging now, we can make it more robust later.

I'm aware that this is moving a bit fast; we can still discuss and revert some of the choices if necessary.
