hub image: remove plotly to avoid pin on ipywidgets<8 #159

Plotly apparently also restricts ipywidgets, but does it in a non-straightforward way that makes it not obvious it does.
Failed to comment out plotly in this PR, but pushed straight to master branch as a followup: https://github.com/pangeo-data/jupyter-earth/commit/94a3d1d0d1213e16423a1106c36feb7b4b1e44cc
