Refactor tests to increase maintainability #107

@rabernat mentioned in https://github.com/pangeo-data/rechunker/pull/93#discussion_r713939730, that some of the tests could be simplified.

I just wanted to open a new issue to keep track of this:

[ ] I suspect we could refactor the tests to only use one of these example dataset, making them easier to read and maintain
[ ] We might want to drop the 'options' from here and here or refactor them into a fixture?
