Add minimal example for demonstration purposes #2

This PR adds a few minimal working STAC objects for demonstration and discussion purposes.

I'll merge these objects into branch dev and follow-up with comments on #1 once they're rendered by https://github.com/pangeo-forge/pangeo-forge-vue-website/pull/6.
