DV-612 ⁃ Ensure all data is being written and stored in a local tablet file as well as being synched to Amplify #552

All sightings data should be recorded into a simple file, such as a CSV, that can be assessed on the tablet in a relatively simple manner, in addition to being synched to Amplify. This is to act as a failsafe, in case synching or internet stops working. This CSV can either be emailed, mailed, or physically collected by Nikki when she is on site.

Extra points for finding a simple way to check that all the data contained within the CSV has actually made it onto the server using some automated checks, if possible, so we can be confident that all the data have made it up already, or identify any missing data.

All data from gui and saved datapacket are being written to a csv file locally and then pushed to an s3 bucket currently
