I'm not sure how much an issue the name "Quartz OS" is. I've never heard the term used to refer to OS X stuff outside of Apple documentation or websites/blogs about it. Also, the name is "Quartz OS," not "Quartz." However, I am certainly open to suggestions, and am willing to switch to a better name so as to avoid any potential conflict.
Off the top of my head you'll have a lot of confusion if you ever make any libraries for the OS/DE. Wikipedia lists the following OS X Quartz components:
This may potentially cause a lot of confusion and also make people think you're dependent on OS X proprietary components (OS X Quartz is closed-source).
Not even mentioning trademark considerations, that should be obvious.
If the goal is to create a desktop environment following the Material design guidelines, you should probably consider naming the OS/DE accordingly, e.g. "Matter", "Fabric", or something else that evokes the notion of material.
Thanks for your feedback. I really like the name "Fabric"! I've put up a poll on Google+ to get name ideas or feedback.
Unfortunately, Fabric was already taken. So, the official name is now Quantum OS. I will close this ticket after the website updates.

Let's leave the name alone. Apple is name after apples, why can't this be named after a quantum computing?
"Quartz" is the name of Mac OS X UI component, see https://en.wikipedia.org/wiki/Quartz_%28graphics_layer%29
I suggest you pick a different name for the project to avoid confusion.
