switch to mathjax for docs math #43

related to #42.

I couldn't recreate the broken math symbols in the documentation locally, but I'm taking a guess and hoping switching from imgmath to mathjax as our math renderer will fix it.

This switch didn't break the docs for me locally. If it passes the builds maybe we just give this a try?

Sure, worth a shot. I don't remember if our docs build after every PR or every release, but I'll go ahead and merge this and see if it fixes it.

Had to turn back on the build action because the repository has been dormant since that last failed build a couple months ago, so I don't know if this worked yet. Gonna try fixing the test issue #41 right now and see if the auto-build will run once that's fixed.
