I tried to reproduce this in Umbraco 11, 10.0.0 and 10.5.1, but I wasn't able to. Are there a few things that you could check as this indeed looks to be going wrong.
Could you check the database column SeoToolkitScript what data is saved there?
Could you attach the result of the GetAllDefinitions request? It seems like it might be loading the wrong field.
Do you have any code in your codebase that might change the results? Something like JSON changes or intercepters?
