build: orb stack defaults #294

@kylehotchkiss can you give this a run through on an upgrade project?

I've been using these commands to quickly update:

git remote add bubs-next git@github.com:patronage/bubs-next.git
git fetch bubs-next
git cherry-pick 80ac0f8^..0cc01d1
cp wordpress/_init/docker-compose.local.yml wordpress/ && cp wordpress/_init/local.sql wordpress/_data/

Then resolve brief merge conflicts, otherwise we're up and running.

git cherry-pick --abort will then reset git status
