~~After https://github.com/patternfly/patternfly-react/issues/11090 goes in, victory will need to be added as a build dependency to org so the examples continue building.~~

bump org to rc versions
bump org with updated extensions

This may be unnecessary as the original PR did add victory as a dep to react-docs, but will use this issue as a placeholder to test the update and bump org versions.
