Reason for changes

With the SDK's full transition to SwiftUI, the UIViewController extensions have become redundant. This change leads to a more streamlined and organized codebase

Summary of changes

Remove the UIViewController Extension, when we had a UIKit demo app
Replace UIKit import with Foundation for streamlined functionality
