make dark mode work properly with Rocket.Chat 5.3.0 #205

Most adaptions for Rocket.Chat 5.3.0 are covered by adding CSS variables for color definitions, as described in https://github.com/pbaity/rocketchat-dark-mode/issues/204#issuecomment-1299314335.

Some additional minor tweaks were necessary (e.g. regarding messages including quotes or the "Apps" page in the backend).

Fixes #204.
