add docs #96

The goal of this pull request is to create documentation about the Sophia project.

The documentation should contain:

[x] Quick Overview
[x] Getting Started Guide

For detailed documentation, there should be added more pull requests in the future.

The docs folder is powered via mdbook and will be served via Github pages and automatically build with GitHub actions.s

Thanks a lot and sorry for taking so long integrating this PR. As you can see, I have made some adjustments, but I'm really happy with this. I'll try to find some time for adding some content, but feel free to submit some as well.
