Thanks for posting your EFI to GitHub. Your Catalina works flawless with my 840 G5. I tried Big Sur 11.2.3 and it doesn't work for me. Have you had any success yet with a fresh 11.2.3?

FWIW the error I am seeing on first boot is:

Big Sur Installer error in opening <"usr\standalone\OS.dmg.root_hash">

Just make an update after installing with Catalina from USB and update my EFI folder to latest and it will bring magic! #goodluck
