I've seen the phantomjs or headless browser approach in a couple of articles too. Not sure how I feel about it. For crawlers, load times may not be an issue (if you have too start the headless browser process on every crawler request). Also, there won't be that many crawler requests and that would probably be something you want to keep track of with analytics. And the idea of installing, updating, and maintaining a headless browser might add more complexity to your app stack... and it may not appeal to everyone, I guess.

Does using squarespace mean using it for all the content (I guess my question is, what happens to the SPA once you add squarespace)?

What's the reason for not favouring a static site generator or a lightweight server-side framework? Is there going to be a lot of content that is dynamic?
