Intro reorganization #2

The initial draft of the introduction was based on the CogSci paper, which motivated two specific analyses (one theoretical on IRT-like analyses and one methodological on time window selection) that are not in the BRM paper. The introduction needs to be rewritten to focus more broadly on Peekbank's potential and/ or to motivate the use cases we end up adding in the BRM paper. @mzettersten is taking a first stab at this.

Made some good progress on this and merged in some new paragraphs in the introduction aimed at setting up the tidbits a bit better.
