Update the EUR icon and name on Vortex UI #92

Context

Currently the EUR logo is incorrect and shown as anchor icon also the name is for the token not the currency, this ticket is to make changes

Requirement

Change EURC to EUR
Change the icon to the attached one in this ticket
Also change the name in the dropdown to EUR

So instead of mentioning the name of the underlying stablecoin, going forward we just mention the name of the output fiat currency, right?

Let's implement this by adding some configuration parameter to the OUTPUT_TOKEN_CONFIG that describes the fiat name of the token and use this parameter to display.
