refactor: directory structure #81

This is the preliminary work for the future directory structure of this repo. What's done:

Created the old dir with all code related to v1 of the DEX
Created the shared dir for all shared v2 code
Separated the components folder: some moved to old, some stayed there
Separated the utils folder: some moved to old, some moved to shared
The app (v2) and pages (v1) remain as they were

I hope that it will be easy to agree with these changes to prepare for the next structural proposals
