Update dependencies

Fix for 2 high and 4 moderate vulnerabilities.

• poetry update
• fix needed for error same as here: solved by fixing flask for now <2.2.5
• manually going to pycov>4.0 to prevent warning shown here
• fix needed for werkzeug=3.0.0 same as here: solved by fixing werkzeug for now <3.0.0

Only ran tests, not sure how good coverage is. So please check if important functionality is broken,
