This PR adds a bit of info about OpenAthens to the readme file, along with an example metadata file.
I talked with the person from Coastal Carolina who handled authentication about how to make the process of setting up on OpenAthens easier for future tenants. He contacted OpenAthens support and they gave him a working version of our metadata file.
In the end, the most effective way to remember all this is to keep that file in our repo for future reference.
