fix issues on releases artifacts : https://github.com/pharmaverse/admiralci/actions/runs/7597798327 (overwrite mode on new releases seems to not work properly .. ) https://github.com/svenstaro/upload-release-action/issues/59 Should we create a new release for each new docker im version ? (not super keen on proceeding with this approach ..)

(maybe this could be a workaround - first deleting asset from existing release https://github.com/mknejp/delete-release-assets)
