Update DDEV install instructions to not require PHP and Composer on host machine #117

@gitressa I made a couple of changes to try and minimize the number of commands needed. Want to give it a quick test? Happy to merge this if it works for you -- I agree this is a lot less awkward, and that requiring PHP/Composer on the host machine gets weird fast. My bad!

Tested this with both DDEV and bare metal. Worked great. I think these instructions are fine, and we still have the ability to override the database connection in either environment. I'm satisfied. Merging.

Wow, that was fast, thanks! And yes, I agree that it works -- I just completed a local install, and everything worked well, and I got Starshot with PHP 8.3.

And no problem, getting used to DDEV takes a while ... I am very grateful for the amazing work you do on Starshot.
