Publish 1.1.0 #200

We are ready to publish this sim!

@Luisav1 and I are ready to move to publish this sim. First we noted that on main the version is still in 1.0.0, this is wrong because the prototype is 1.0. The new publication with the chart intro will be 1.1. Updating now.

Please note that this means that all dev versions 1.0.0-dev.18 and greater should have actually been for 1.1.0.
