Update screen icons to include new skaters #475

Similar to https://github.com/phetsims/energy-skate-park/issues/340

The screen icons use deprecated skater artwork. We should decide which skaters to include in the icons and determine if/how to swap out the artwork when the skater set is changed.

In https://github.com/phetsims/energy-skate-park/issues/340 we decided to use static images for the tracks/backgrounds and then add the skaters in code. I didn't create this icons originally, so I'll need to re-create them in Illustrator.

We still need to decide which sakters to feature, so leaving self-assigned.

This simulation is not currently a priority, unassigning.

This is going to be addressed in the upcoming publication with new character sets.
