numberOfAtomsEvaporated should be a Property #246

It has continued to feel sloppy to me that this is just a number on the model, it would be cleaner to make it a Property.

This is mostly important for phet-io (data stream, state, studio customization)

@arouinfar, will you please review the new numberOfAtomsShearedOffProperty, this should have been a Property ages ago, I just hadn't gotten around to it just yet.
