Rename "evaporate" to "shearOff" across the sim #247

Over in https://github.com/phetsims/friction/issues/236#issuecomment-924478507 and discussion below, it was determined that "shearing off" makes more sense that "evaporating" or "vaporizing". There are many many usages of this, and we will want to change all of them for clarity.
