breakout from #128 this PR now only includes:

creation of vt_render_to() function, which determines the format knitr/rmarkdown are rendering to
replace the default values in the format argument of kabling functions to vt_render_to()

failure is not due to code, but weird mac issue? with the newest release of R? 🤷

failure is due to pdftools not installing on mac, not due to code issues 🤷
