Adding some additional CI - will request review once I get it fully passing. Adds:

checks across more instances
test coverage
PR review
gh pages update on merge to main

need to wait until #93 is resolved - R versions <= 3.5 don't have the same output from news(). Moving to a changelog file that is manually parsed will resolve this.

issues in 3.4 and 3.3 should be resolved once the latest version of kableExtra is submitted/available on CRAN.
