Please take a look at the logging output in journalctl
, GNOME shell should log details about the error. Without this it is impossible to tell what is happening.
Same issue trying to record GIF, here is my journalctl output:

Seems to be from a recent update, but I haven't used it in a while.

and that didn't seem to help.
