Improve documentation #89

Improvement to the documentation as suggested by JOSS reviewers, including:

Adding information about the problems the software is designed to solve and who the target audience is. Closes #87.
Add additional examples. Closes #88.

Additionally, it modifies pom.xml to exclude IntelliJ files from Spotless testing.
