Mobile (3g/4g/5g) network operators typically run on heavily NAT'd infrastructures due to the vast number of mobile devices they have to support, in relation to the limited number of "real" IP addresses they have been allocated to work with. So they multiply the number of IP addresses they can issue out by employing a NAT and then issuing out NAT'd IP addresses. Some non-mobile ISPs are forced to use the same strategy if they have a limited ip address allocation compared to the customer base they service.
In your case, I'd recommend finding a VPN service that supports port forwarding. I've had success with Surfshark while traveling (and using 4g) in the past, but have not tested it recently. Many VPN services offer a free trial so you can try before you buy.

Using an HP ENVY x360 Windows 10 Home
The problem with opening ports and port forwarding to run the Node seems to be because I've got a THREE 4G wifi router (ZTE MF286D) and I can't seem to make it open the required ports no matter what I try,
Can anyone offer any help .. or am I chasing a lost cause with this router ?
