v2: organize files under v1 folder #509

I've organized all OG code under v1 folder in preparation for making v2 the default, so the final folder structure becomes:

@larrythecucumber321 this changes a lot of files so please let me know if you're ok going ahead with this 👍

@janklimo thanks for kicking this off! All of your changes seem logical, so happy to proceed like this.

Will you also be moving the pages/v2 pages into the root pages directory and vice versa for the v1 pages so that we can have the old UI available at /v1?
