Yep, this works because the old plugin directory is renamed to create a "backup" before extracting the new plugin: https://github.com/shopware/platform/blame/3050211738e7141d0dfca24afb09e97f895a689a/src/Core/Framework/Plugin/PluginExtractor.php#L135
