Thanks for your suggestion. I'm well aware of the "collection time" syntax and its use; and the idea of showing those has been mentioned at the launch of the post-boxes theme.
The reason why this hasn't been added yet is that decently rendering these and decently asking a beginning contributor (for which we assume little technical knowledge) is hard.
Right now, I didn't bother creating such an element, but I would happily accept a PR which asks the user for this kind of input. For inspiration, the date picker and/or wikipedia search could be some inspiration on how to create something like that. (Don't bother inspecting the 'Opening Hours'input element, it is horribly complicated).

For people posting small items that they would like to be delivered quickly it is sometimes useful to know if a postbox has has its last collection for the day.
It would be nice if it were possible to enter collection times for postboxes on the "Postbox and Post Office Map" and have a badge that goes red if it has already passed for the day.
The collection times page on the wiki suggests this is displayed in a few different places and so would hopefully be quite broadly useful. The syntax seems to be a stripped down version of the opening hours syntax so the relevant template might be re-usable for other similar things like tagging the times of religious services too.
