using my fork for their SDK while waiting for their SDK to support v2 of the API. pietrop/assemblyai-node-sdk

[x] options for media-model
[x] ~consider tweaking interface to be more similar to v1 of the SDK~
[x] publish model to npm @pietrop/assemblyai-node-sdk - unofficial sdk etc..
[x] pull in DPE electron
[x] add to DPE settings option to choose between media and phone
[x] wire up to get those preferences when running STT
[x] Check MozillaDeepSpeech still work after, refactor/changes
