updates to documentation #57

This PR provides some more context and details for setup to those that may not be familiar with setting up Vortex, and are using it for the first time on their Steam Deck. It also likely has instructions where things have changed slightly from when this was first written, for instance if the first game modded requires an extension, it does not pop up warnings to be fixed, and thus would cause mods to fail.

Note: As this is a simple doc update, merging prior to @SirStig 's PR would be beneficial. If we could merge that PR into a separate develop branch, I would be happy to update his more formal README as well. (I kept the formatting and tone of the original in this PR).

Looks good. Not sure if that PR will be merged - ton of things to resolve and the new Nexus Mods App will hopefully obsolete this soon.
