Follow up to https://github.com/pimcore/studio-backend-bundle/issues/184

Improve the documentation of the mercure setup

Server/Client is unclear (Tokenprovider)
Configuration examples should be better (working without changes)
Password length is not clear
Setup -> no need for ssl/proxy
Check proxy setup (was not required for poc)
