CI: Simpify release files. Fix artifact filenames.

Removes the cruft from release files and just produces: enviro-<version>.uf2.

A full .zip of the build, and the filesystem-only .uf2 can still be obtained from GitHub Actions artifacts.

Closing for now since it's been conflicted. Also artifacts expire, so it might be useful to have a release zip.
