Updating cat image and rainbow gif to be square #2

The images (rainbow gif and cat image) that were in the examples folder were 2:1 aspect ratio images designed for the smaller ST7735 LCD breakout. I've updated both to be square, 240x240 pixel images that will work with this display nicely.
