Fix broken links to broker routing in Architecture page

Currently, the links in https://docs.pinot.apache.org/basics/concepts/architecture lead to https://github.com/pinot-contrib/pinot-docs/blob/latest/basics/operators/operating-pinot/tuning/routing.md which results in a 404.
