Description

Updates the CI matrix

Also: Removes an old setting from Travis. See https://blog.travis-ci.com/2018-11-19-required-linux-infrastructure-migration

Why are we doing this?

Check against latest.

Benefits

We will know that it still works as intended.

@piotrmurach Now that 2.3 is also EOL, perhaps the CI matrix could be pruned?

Thank you! ❤️ I believe that if it is easy I should support as many Ruby versions as possible. 2.3 may be EOL but you will probably find tools and production systems that still use it. I'm sure the time will come but there is no need to rush.
