I was just wondering if it was possible to use evovle but keep the default 
Garry's Mod Scoreboard style..

Yeah.
Goto /addons/evolve/lua/ev_plugins/
there you see sh_scoreboard.lua
delete that, then start/restart your server and you have the default scoreboard 
(like in that picture :)
