Reset any additional manually set version suffixes #34

To support manually bumping a tool and not having to remember to reset it to @VERSION_SUFFIX@. See https://github.com/galaxyproject/tools-iuc/pull/6154#discussion_r1679181293

This is actually done in Planemo, so this issue should be moved there, but it's not possible to transfer issues between organisations.

I would maybe keep it here, as it's work to be done for this project ?
